I love my job: the clinic I work at is filled with a wonderful bunch of people who love to cook, and a lot of whom are vegan. The folks who aren’t vegan even go out of their way to make vegan food most of the time. For the holidays, my awesome boss made these. Now, the holidays are long gone but I keep making them. I’m obsessed!
These are sugary, rich, and boozy. They’re great to bring to a party. And good to eat while drinking bourbon. I like bourbon. Was that unclear?

|1 box (11 oz) vegan vanilla wafers*
1 c finely chopped walnuts
6 oz good quality vegan dark chocolate chips
1/2 cup bourbon
|1/2 cup superfine sugar**
3 Tbsp corn syrup or golden syrup
Powdered sugar (for rolling)
Chop vanilla wafers and then walnuts in the food processor until very fine; mix together in a large bowl.
Gently melt chocolate over a double burner; whisk in corn syrup and bourbon, followed by sugar. Add the chocolate mixture to the dry ingredients and mix well.
Allow to sit between 15 minutes to overnight (cover if for a long period) to become less sticky. Roll into 1” balls and coat with powdered sugar. Store for a month, if possible, to mellow or enjoy right away for a kick!
* Nilla Wafers ain’t vegan. I used the Back to Nature brand which I bought at a health food store. They’re a 9 oz box so I guessed what 11 oz was– do whatever works for you!
**If you can’t find superfine sugar, put regular granulated sugar in a food processor until sugar is fine. This step is important or your bourbon balls will come out crunchy.
Please note: Even though your cuter-than-possible puppy may want one of these little balls of happiness, remember, bourbon and chocolate are not good for pupper dogs. Aw, poor Butters. Don’t worry, he got another treat.
