Crostini with Fig Compote

After making the delicious Rosemary Ricotta Potato Pizza the other day, I had some cashew ricotta left over. If you missed that last post, the cashew-based ricotta is an incredible recipe from my friend Natalie over at The Veganette.

I was trying to think of a recipe, then I remembered this old Martha Stewart recipe I had lying around that called for goat cheese. Subbed in the cashew cheese and damn if it wasn’t delicious. MMMMMM!!!!!
 
I didn’t have any french bread laying around to make crostini so you’ll notice in the pics I used some plain ol’ crusty bread I had and then cut it into slices. That would work too. I’m versatile!
