Now that Vegan MoFo is over (sob), upon deep reflection, I realized I made a whole lotta Italian food this last month. So, I thought I should move to another part of the planet for inspiration. ¡Viva la enchilada!
I got some inspiration from a recipe found on Detoxinista, but to be honest, it was a little too healthy so I added some goodies to it.
The combo of sauciness with creamy potatoes, spices and cheesy Daiya is just TOO DAMN MUCH. This is an easy crowd pleaser, you could even double the recipe for a larger party.
