Don’t worry, even though it’s green and looks healthy, it tastes like you’re eating dessert.
This smoothie is inspired by one I tasted at Jivamuktea Cafe in NYC. I work in bustling Union Square but surprisingly there aren’t a ton of vegan options in Union Square, unless you really love falafel, and yes, a girl can eat too much falafel.
Jivamuktea Cafe is in an office building in the back of a yoga studio, not a place you’d expect to find great food. But the yoga studio, Jivamukti, strongly supports veganism and has a great cafe called JivamukTEA! Because they serve tea! Get it? Oh, nevermind. Anyway, I googled “vegan Union Square” one day, Jivamuktea came up, and now it’s one of my favorite places. They have a huge all-vegan menu.
Aside from all of the great vegan food they have, they also have a great smoothie list. I modeled this one based on the ingredients they had in their Love Smoothie. The combination of dates and bananas makes it so creamy, and the spirulina adds the vitamins and protein that makes it extra healthy! It’s quick, easy, and great for on-the-go mornings or a midday snack.
Sweet and Creamy Green Smoothie
Makes 1 smoothie
|• 8 oz vanilla almond milk
• 1 banana, sliced
|• 4 medjool dates, sliced and pits removed
• 1/4 tsp spirulina powder
Place all ingredients in blender and blend on high speed for one to two minutes, depending on type of blender (less time for a Vitamix or other high-speed blender).
